Obesity has become a nutritional problem in Indonesia. The prevalence of obesity children aged 5 until 12 years Indonesia is quite high, namely 8.0 percent, while the East Java above national rate or greater than percent. Efforts to prevent and cope with need be done, one them by making snack alternative like bar addition seaweed beet. Seaweed beet good ingredient for because it high fiber content low fat. aim this research know effect Modification Snack Bar Cheubit Addition Eucheuma cottonii Beet Beta vulgaris L. as Alternative Elementary School Children content, chemical quality, energy value, organoleptic quality. type was laboratory experiment Randomized Complete Random Design RAL design using 3 treatment levels, proportion wheat flour P1 10 54 15, P2 49 20, P3 44 25. Each formulation done times replication so that there are 9 units research. results statistical test Oneway Anova showed gave no significant difference protein fat moisture ash carbohydrate value bar. Assessment qualities Kruskal Wallis advanced Mann Whitney color, taste, texture, however, not aroma best level 100 gram which contains 209,86 kcal, 3,08 gram, 2,99 42,67 2,12 gram.
